Pineapple Arugula-Mint Mojitos

I tasted some truly fabulous salad combinations at the Dole Salad Summit in California, but the idea of putting salad greens in cocktails really blew me away. These mojitos go down way too easily and are an impressive festive drink to serve at a party.

 

 

 

 

 

 

 

Pineapple Arugula-Mint Mojitos

Prep: 20 min.

Makes: 8 servings

1 fresh DOLE® Tropical Gold® Pineapple, cut into chunks

1 cup fresh mint leaves plus additional mint for garnish

1 cup DOLE Arugula

2 limes, each cut into 8 wedges

1/4 to 1/2 cup packed brown sugar

12 oz. DOLE Pineapple Juice (1-1/2 cups)

2 cups light rum

Ice cubes

Club soda (optional)

1. Reserve 8 pineapple chunks for garnish.

2. Puree remaining pineapple in covered blender or food processor.

3. In large pitcher muddle or crush mint, arugula, lime wedges and sugar. Add 1-1/2 cups pureed pineapple, pineapple juice and rum; stir well.

4. Fill 8 tall glasses with ice cubes. Pour pineapple mixture over ice. Top with splash of club soda, if desired. Garnish each with reserved pineapple chunk and sprig of mint.
