Braised Turnips with Apple Cider Vinegar and Maple Syrup

This is a wonderful way to take advantage of one of fall and winter's most overlooked vegetables. Tart and sweet, they're sure to make everyone in the family happy!

Ingredients
  

  • 3 - 4 turnips
  • 1/4 cup apple cider vinegar
  • 3/4 cup water
  • 1/3 tsp. salt
  • 1 Tbsp. pure maple syrup
  • 1 Tbsp. butter or margarine

Instructions
 

  • Cut off the greens and peel and dice 3 - 4 turnips. Heat 1 Tbsp. butter in a large heavy skillet over medium heat. When it is bubbling, add the turnips and stir to coat them.
  • Let them brown for about 10 minutes, tossing occasionally.
  • Add 1/4 apple cider vinegar, 3/4 cup water, 1/3 tsp. salt, and 1 Tbsp. pure maple syrup.
  • Bring it to a boil, cover the pan tightly, reduce the heat to keep the liquid simmering, and let them cook for 20 minutes.
  • Remove the top of the pan and continue cooking the turnips for 10 more minutes until the liquid is absorbed and they are tender and browned in spots.
