Healthy Halloween Recipes: Spider Black Bean Dip

Black beans, fresh tomatoes, and vegetables (spiders optional) make this a healthy yet deliciously fun dip for a Halloween party or as a meal before heading out to Trick or Treat.  Serve with cheese cut like pumpkins, our homemade tortilla chips, and your favorite veggies -- fresh sweet peppers, blanched green beans, jicama, celery sticks, carrots for a healthy Halloween recipe.  This might become your favorite Halloween recipe.

Black Bean Dip Prep (10 minutes) Makes about 2 cups of dip, 8 servings, 1/4 cup each 15 oz. canned black beans or 1 1/2 cups cooked black beans, drained and rinsed 1 Tbsp. extra virgin olive oil 1 Tbsp. orange juice 1/2 lime, juice only, about 2 Tbsp. 1/4 tsp. garlic powder (or use 1 clove fresh garlic, minced) 1/4 tsp. salt 1/2 tsp. chili powder 1/2 tsp. ground cumin

In a food processor or blender, puree all the ingredients. If too thick, and 1/8 – 1/4 cup water.  For spicer flavor add 1 chipotle pepper or 1/8 tsp. cayenne pepper....

Smoothie: Blueberry, Basil, and Lemon Smoothie

This flavor combination is summery and refreshing, perfect before or after a workout or a walk. The herbs make it extra fragrant, and the yogurt and banana make the smoothie creamy.

Summery Appetizers: Watermelon, Feta and Mint Cubes

Our 17-year-old, Solomon, was home for a couple of weeks this summer without much to do (to his delight) so he and I decided it was a good time for him to learn a few more cooking skills. Solomon’s cooking repertoire is mostly limited to homemade nachos, queso dip, brownies and smoothies, and he recently added cooking pasta and making scrambled eggs. As the son of a professional cook,  who likely only has one more year at home before going to college, I thought he needed to add to his range.

I hired Solomon to make an appetizer for a meeting I was going to. We came up with the recipe concept together then I left it to him to shop and implement (I did give him some tips on safely cutting a watermelon so he wouldn’t lose a finger).  I left the room to prepare for the meeting and I was so impressed with the result of his efforts. These watermelon, feta and mint cubes look tantalizing and the sweet and salty bites were a big hit at the meeting.

Fruit and Veggie Smoothies: Four-Veggie Blast Smoothie

Whatever the weather, I love making smoothies (especially fruit and veggie smoothies) for breakfast or an afternoon snack because I know that they get my family toward our daily goal of 5 – 7 servings of fruits and vegetables. This one’s a little tart but even with all those veggies, it turns out dark pink and very drinkable.
