Red Snapper V8

I remember those silly TV ads for V8 vegetable juice from the ‘70s: (‘Wow, I could have had a V8!’)  I have discovered that V8 juice also makes a flavorful and healthy base for a sauce, and a good cooking liquid for grains. Serve the fish with gnocchi and a green salad with apples, Gorgonzola cheese, and pecans.
