1cupunsweetened light coconut milk (sold with Asian foods)
1/2cuporange juice
1/2tsp. salt
1tsp. curry powder
1/4cupraisins
1cupfrozen shelled edamame
Instructions
Combine all the ingredients in a medium saucepan with 2 1/2 cups of water, bring to a boil, cover and simmer for 15 minutes, fluff with a spoon, and serve.
