This is a gourmet twist on grilled cheese. You can opt for mustard or apricot jam, depending on your preference for savory or sweet, or use both if you can’t decide. If your kids aren’t very adventurous eaters, make traditional grilled cheese sandwiches for them with Cheddar or Muenster cheese (they might even like Brie), and serve the spinach on the side.
2Tbsp. Dijon mustard or apricot jam (use wheat/gluten-fre, if neeeded)
8slicesmedium-thick, firm whole grain or sourdough bread (use wheat/gluten-free, if needed)
8oz. Brie cheesecut into thin slices
Instructions
In a large skillet, melt 1 Tbsp. of the butter or margarine over medium heat. Add the garlic and cook it for 30 seconds.
Add the spinach and stir it until it begins to wilt, about 3 minutes. Transfer it to a bowl and set it aside.
With a paper towel, wipe the skillet clean.
To build the sandwiches, spread the mustard or jam on 4 slices of the bread. Divide the cheese slices among the 4 slices of bread, and top them with the spinach. Cover them with the remaining bread slices. Lightly spread the outsides of each sandwich with the remaining butter or margarine.
In the skillet, cook the sandwiches over medium heat until they are lightly browned, 3 – 5 minutes per side, turning them once, and pressing them with a spatula or with a heavy pan for flatter sandwiches. Slice the sandwiches in half and serve them immediately.
