In a small saucepan over medium-low heat, combine the honey, peanut butter, and butter or coconut oil, cinnamon, and salt and stir with a rubber spatula until smooth, 1 - 2 minutes.
Remove it from the heat and stir in the rice cereal and oats.
Let it cool for 1 minute and stir in the chocolate chips or raisins (for less melt-y chocolate chips, let it cook for 3-4 minutes).
Using a small cookie scoop or two spoons, drop compact spoonfuls of batter onto a silicone or wax paper lined baking sheet.
Refrigerate until set, about 15 minutes. Keep refrigerated for up to 1 week. Makes 20 cookies.
