This one-pot pasta is also a one-pot meal, covering your protein, vegetable, and carbohydrate needs all in one dish. One-pot pastas make use of the naturally occurring starches in the pasta to create a thick, creamy, flavorful sauce—you won’t believe how much flavor can come from such simple preparation!
1lb. fettuccine (use wheat/gluten-free, if needed)
4cupsreduced-sodium chicken or vegetable broth (or use any variety)
15oz.diced fire-roasted tomatoes
2 - 4pre-cooked Italian turkey, chicken, or vegetarian sausage (use wheat/gluten-free, if needed),sliced
2Tbsp. extra virgin olive oil
3clovesgarlicminced, about 1 1/2 tsp.
1tsp. kosher salt, sea salt, or other coarse salt
1/2tsp. black pepper
5 - 6oz.baby spinachroughly chopped
1cupfresh basil leavesroughly chopped
1/3cupgrated or shredded Parmesan cheeseoptional
Instructions
In a Dutch oven or large pot, combine all of the ingredients, except the spinach, basil, and cheese. Add ½ cup of water.
Bring the mixture to a boil and then turn to a simmer, stirring occasionally so that the pasta doesn’t stick together, for 5 minutes.
Add the spinach and cook for another 3 – 5 minutes, or until the pasta is al dente and the liquid has been almost entirely absorbed.
Stir in the chopped basil. Serve immediately with the Parmesan cheese (optional).
