3sweet yellow onions such as Vidalia or Walla Wallasliced into thin rings
1 1/2 - 2lbs.bonelessskinless chicken breasts
1cupItalian-style bread crumbs (use wheat/gluten-free, if needed)
1Tbsp. extra virgin olive oil
Over medium-high heat, melt the butter or margarine in a large heavy skillet. Add the onions, coating them with the butter. Partially cover the skillet and turn the heat to medium-low. Cook the onions until they are golden brown, 20 - 25 minutes, stirring occasionally.
While the onions are cooking, lightly beat the eggs in a large bowl. Cut the chicken into 1-inch pieces. Add the chicken to the bowl with the eggs, and gently toss to coat the chicken well.
Drain any excess eggs and add the bread crumbs. Toss until the chicken is thoroughly coated with the bread crumbs.
In a large nonstick skillet, heat the oil over medium heat. Brown the chicken on all sides until it is just cooked through, 6 - 8 minutes in total. (You can remove some chicken for picky eaters before adding the onions.) Add the onions to the skillet with the chicken and stir until it is warmed through. Serve immediately.
Slow Cooker Directions:
Put the onions and butter or margarine in the slow cooker. Cut and coat the chicken as directed and place that in the slow cooker on top of the onions. Cook on low for 8 - 10 hours or on high for 4 - 6 hours.
