This attractive and appetizing dish is a great way to enjoy those cute little wagon wheel noodles (rotelle). Scramble recipe tester Kimberly Wilcox reported that all three of her children, ages 11 to 16, enjoyed it.
16oz. wagon wheel (rotelle) noodles (use wheat/gluten-free if needed)
2Tbsp. extra virgin olive oil
1 1/2tsp. minced garlic(about 3 cloves)
2pintsgrape or cherry tomatoeshalved
1/2cupgrated Parmesan cheese
3 - 4Tbsp. herbed or plain goat cheese(about 1/2 of a 5.5 oz. package)
1/4cupfresh basilchopped, or 1 tsp. dried
1/4tsp. saltor to taste
1/8tsp. black pepperor to taste
Instructions
Cook the noodles according to the package directions until they are al dente, and drain them.
While the noodles are cooking, heat the oil in a large heavy skillet over medium heat.
Add the garlic and tomatoes and cook, stirring occasionally, until the tomatoes are slightly softened, 5 - 7 minutes.
Reduce the heat and stir in the drained pasta, Parmesan cheese, goat cheese, and basil.
Season it with salt and pepper, and serve it immediately.
