You can almost imagine you are in Capri (the origin of the famous Caprese salad upon which these sandwiches are based) when you bite into these sandwiches. Scramble recipe tester Alexandra Taylor described them as “a mouth watering treat.” Scramble member Jennifer Larson recommends cutting them into 1-inch slices for an easy appetizer.
2Tbsp. balsamic vinaigrette dressingsee directions below for homemade or whisk together 1 Tbsp. olive oil and 1 Tbsp. balsamic vinegar
1/2sweet yellow onionhalved and thinly sliced (optional)
Instructions
Slice the bread in half, separating the top from the bottom.
On the bottom half of the bread, put a layer of the cheese, followed by the tomatoes and basil. Top the fillings with the vinaigrette dressing, and add the onions, if desired.
Put the top half of the bread on top of the fillings and slice the sandwich into 4 smaller pieces to serve it.
Notes
To make Balsamic Vinaigrette Dressing: Whisk together 1/4 cup balsamic vinegar, 1/3 cup extra virgin olive oil, 1 tsp. superfine sugar (optional), and 1 tsp. minced herbs such as basil and mint. Add 1 Tbsp. Dijon mustard, if desired. Refrigerate the extra dressing.

Additionally, you can save quite a bit of money this way. Fresh herbs are generally very overpriced at the supermarket and you can often purchase a whole plant for less than a small package of herbs at the store.
