Peanut Butter Breakfast Bites

Slightly less sweet than most breakfast cookies, these bites will make everyone happy because they are fun, portable, and look like cookies, yet they’ve got protein, fiber, and whole grains that will start everybody’s day off right.

Ingredients
  

  • 2 1/4 cups rolled oats (use wheat/gluten-free, if needed)
  • 1 cup whole wheat flour (use wheat/gluten-free if needed)
  • 1/2 cup walnuts chopped
  • 1/2 cup dried cranberries
  • 1 tsp. ground cinnamon
  • 1/2 - 1 tsp. ground cardamom
  • 1/4 tsp. kosher salt, sea salt, or other coarse salt
  • 1/2 cup smooth natural peanut butter or other nut or seed butter
  • 1/2 cup unsweetened applesauce
  • 1/4 cup maple syrup
  • 1 egg
  • 1 Tbsp. brown sugar

Instructions
 

  • Preheat the oven to 350 degrees and line two baking sheets with parchment paper or spray with cooking spray.
  • In a large mixing bowl, combine the oats, flour, walnuts, cranberries, cinnamon, cardamom, and salt and mix well.
  • In a medium-sized mixing bowl, combine the remaining ingredients and stir until well-combined.
  • Pour the wet ingredients into the dry and mix well, until all of the dry ingredients have been incorporated.
  • Then, using spoons or a cookie scoop, distribute the batter 1-inch apart on the baking sheet
  • Bake for 10 - 12 minutes, or until the bottom sides of the bites are turning golden brown. Remove the baking sheets from the oven, let the bites cool on the sheet for a few minutes, and then move them to a cooling rack. Serve immediately or store in an airtight container for up to 3 days or freeze for up to 3 months.

Notes

Do Ahead or Delegate: Chop the nuts, mix the dry ingredients, or fully prepare and store or freeze the bites.
Scramble Flavor Booster: Double the cinnamon and/or cardamom.
Tip: When measuring sticky substances, such as peanut butter and maple syrup, spray the inside of the measuring cup with a little bit of cooking spray first. This will help the sticky substance slide right out.
