Ingredients

  • 1 Tbsp. coconut oil or extra virgin olive oil
  • 1 lb. sweet potato peeled and diced into 1/2-inch pieces, es
  • 1/4 tsp. ground cinnamon

  • 2 tsp. brown sugar

Instructions

  • In a large skillet over medium heat, heat the oil, add the potatoes and stir to coat.
  • Cover and steam the potatoes for 5 minutes to soften them, reducing the heat if necessary so they won’t burn.

  • Season the potatoes with the salt and brown sugar, and continue to cook for about 5 more minutes until they are nicely browned and tender.
