These banana oatmeal breakfast bars are a perfect example of using the natural sugar in fruit to create a sweet and delicious dish. They are a big hit with kids and adults and make an awesome high fiber and protein make-ahead breakfast, snack, or healthy dessert. They’re easy to make, and the batter tastes like a healthier version of chocolate chip cookie dough.

Ingredients
  

  • 3 very ripe bananas
  • 2 cups rolled oats (use wheat/gluten-free, if needed)
  • 1/2 cup unsweetened almond milk or use any variety of milk you have
  • 1/4 cup almond butter or use any nut or seed butter
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 tsp. pure vanilla extract
  • 1 tsp. ground cinnamon
  • 2 - 3 Tbsp. cocoa nibs or use mini chocolate chips, raisins, or chopped dried apricots

Instructions
 

  • Preheat the oven to 350 degrees. Lightly grease an 8 x 8-inch square pan with coconut oil or nonstick cooking spray.
  • In a medium mixing bowl, mash the bananas using a potato masher or fork and stir in the remaining ingredients.
  • Smooth the batter into the baking dish and bake it for 17 – 20 minutes until it is firm and starting to turn golden brown.
  • Let it cool, cut it into squares and serve it immediately or store tightly covered for up to 3 days, or freeze the bars for up to 3 months.
