Mango and Black Bean Salad KWI’ve recreated a delightful salad that our friend Tricia Nudelman enjoyed at the Genesis retreat in Ek Balam, Mexico.  It’s spa-healthy yet satisfying enough for hearty eaters.  Serve it with sliced avocados with lime.

My leftovers were great! I ate for three days. I made extra and made two meals. I had to bring a salad to an event so I divided the salad above–put some on top of greens with a lime cilantro vinaigrette. Then to the other part I added extra beans and the family made soft tacos with the “salad”. Everyone loved!–the taco eaters and salad eaters.

Very tasty, although doesn\’t make very good leftovers (mango gets mushy, rice gets crunchy). Key lime pie really was easy and delicious.
