
Asparagus with Pine Nuts
By quickly sauteeing the asparagus and adding pine nuts to the mix, each bite of this delicious side dish is all about crunch.
Ingredients
- 1 Tbsp. extra virgin olive oil
- 2 Tbsp. pine nuts
- 1 lb. asparagus trimmed and cut in thirds
- 1/8 tsp. salt to taste
- 1/8 tsp. black pepper to taste
Instructions
- In a medium skillet, heat the oil over medium heat.
- Add the pine nuts and toast them in the oil for 1 - 2 minutes, stirring frequently, until they are lightly browned (watch them carefully – they burn quickly!).
- Add the asparagus and stir-fry it for 3 - 5 minutes until it is tender crisp. Season it with salt and black pepper.
