
Tomato, Basil, and Mozzarella Salad
This is my younger son's favorite salad. He not only loves the flavor, but also loves to make it to share with the whole family.
Ingredients
- 2 tomatoes sliced
- 8 oz. fresh mozzarella cheese sliced, or use crumbled feta or blue cheese
- 10 fresh basil leaves (about 1/4 cup)
- 1 tsp. balsamic vinegar
Instructions
- Layer the tomatoes with the mozzarella and the basil leaves and drizzle it with the vinegar. (For a lower fat version, skip the mozzarella and sprinkle crumbled feta cheese or blue cheese on top of the sliced tomatoes instead.)
