One-Pot Sausage, Basil, and Spinach Pasta

This one-pot pasta is also a one-pot meal, covering your protein, vegetable, and carbohydrate needs all in one dish. One-pot pastas make use of the naturally occurring starches in the pasta to create a thick, creamy, flavorful sauce—you won’t believe how much flavor can come from such simple preparation!

Ingredients
  

  • 1 lb. fettuccine (use wheat/gluten-free, if needed)
  • 4 cups reduced-sodium chicken or vegetable broth (or use any variety)
  • 15 oz. diced fire-roasted tomatoes
  • 2 - 4 pre-cooked Italian turkey, chicken, or vegetarian sausage (use wheat/gluten-free, if needed), sliced
  • 2 Tbsp. extra virgin olive oil
  • 3 cloves garlic minced, about 1 1/2 tsp.
  • 1 tsp. kosher salt, sea salt, or other coarse salt
  • 1/2 tsp. black pepper
  • 5 - 6 oz. baby spinach roughly chopped
  • 1 cup fresh basil leaves roughly chopped
  • 1/3 cup grated or shredded Parmesan cheese optional

Instructions
 

  • In a Dutch oven or large pot, combine all of the ingredients, except the spinach, basil, and cheese. Add ½ cup of water.
  • Bring the mixture to a boil and then turn to a simmer, stirring occasionally so that the pasta doesn’t stick together, for 5 minutes.
  • Add the spinach and cook for another 3 – 5 minutes, or until the pasta is al dente and the liquid has been almost entirely absorbed.
  • Stir in the chopped basil. Serve immediately with the Parmesan cheese (optional).

Notes

Do Ahead or Delegate: Slice the sausages and refrigerate, peel the garlic, chop the spinach, grate if necessary and refrigerate the cheese.
Scramble Flavor Booster: Add ¼ - ½ tsp. crushed red pepper and/or use hot Italian sausage.
Tip: Do you like crispy sausage? Instead of adding it to the dish at the beginning, you can crisp it in a separate skillet with a drizzle of olive oil and then mix it in at the end along with the basil.
