This salad has got a little bit of everything. Crunch and sweetness from the cucumbers, creaminess from the avocado, saltiness from the cheese, and a bright acidity thanks to the lemon and balsamic vinegar. And when they are combined, you've got a salad that just keeps calling you back for more.

Ingredients
  

  • 1 cucumber peeled, seeded, and chopped
  • 2 avocados chopped
  • 1 Tbsp. crumbled Gorgonzola or blue cheese
  • 1/8 lemon juice only, 1 tsp.
  • 1/2 tsp. balsamic vinegar or more to taste

Instructions
 

  • In a medium bowl, combine the cucumbers, avocados, and cheese. Top everything with the lemon juice and vinegar. Toss gently and serve it immediately.

I am confused about the measurement with the lemon. Could you clarify? This salad has my daughter's favorite flavors in it and I would love to make it!

Hi Rita, Absolutely, basically you just want to squeeze a little bit of lemon juice in (the equivalent of 1/8 of the lemon). What I usually do is cut the lemon into eights and then just squeeze one wedge right on. Hope this helps!
