If you are looking for a way to up your rice game, look no further. This rice is fluffy, light, and yet creamy. In short, it's heaven on a plate.

  • 2 cups jasmine rice
  • 1 cup unsweetened light coconut milk (sold with Asian foods)
  • 1/2 cup orange juice
  • 1/2 tsp. salt
  • 1 tsp. curry powder
  • 1/4 cup raisins
  • 1 cup frozen shelled edamame


  • Combine all the ingredients in a medium saucepan with 2 1/2 cups of water, bring to a boil, cover and simmer for 15 minutes, fluff with a spoon, and serve.
