Ingredients

  • 2 Granny Smith apples or use other tart apples, diced
  • 4 stalks celery sliced
  • 1/4 - 1/2 cup walnuts coarsely chopped
  • 2 tsp. reduced-fat mayonnaise or use any variety
  • 1 Tbsp. pineapple juice

Instructions

  • Combine the apples, celery, walnuts, mayonnaise, and pineapple juice. (You can use the juice from a can of diced pineapple, and serve the pineapple separately.) Refrigerate it until ready to serve.

Notes

Scramble Flavor Booster: It's also great with about 1/4 cup of blue cheese or Gorgonzola cheese stirred in.
